材料 INGREDIENT:
蛋白Egg White 3隻/pcs
蛋黃Egg Yolk 4隻/pcs
砂糖 Sugar 40克/g
低筋麵粉 Cake Flour 70克/g
鮮奶 Milk 40克/g
菜油 Vegan Oil 30克/g
芒果粉 Mango Powder 10克/g
竹炭粉 Bamboo Coal Powder 10克/g
淡忌廉 Whipping Cream 200克/g
煉奶 Condense milk 25克/g
芒果 Mango 100克/g
製作步驟
1. 將4隻蛋黃、鮮奶、菜油攪勻,備用。
2. 3隻蛋白加入砂糖打發至中性發泡。
3. 篩入低筋麵粉和芒果粉並拌勻。
4. 把1/2的步驟(3)與步驟(1)拌勻。
5. 將(步驟4)倒回蛋白糊(步驟3)中拌勻。
6. 取出1/3的步驟(5),與竹炭粉攪拌均勻。
7. 把步驟(6)放入唧袋中,在模具上唧出橫紋(虎紋)。
8. 預熱150°C焗爐,焗3分鐘後立即取出。
9. 把餘下的蛋糊倒進模具。
10. 預熱150°C焗爐,焗23分鐘。
11. 焗完後把蛋糕脫模,先放涼5-10分鐘。
12. 在蛋糕還帶微溫時,把它卷起繼續放涼,這令蛋糕之後卷起也不會裂。
13. 打發淡忌廉並加入煉奶,準備芒果粒,並如影片般組合蛋糕,即成。
Steps
1. Stir together 4 egg yolks, fresh milk and vegetable oil, set aside.
2. Whip 3 egg whites with sugar,until and beat until Firm Peak.
3. Sift in the cake flour and mango powder and mix well.
4. Mix 1/2 of step (3) with step (1). Pour (step 4) back into the meringue (step 3) and mix well.
6. Take 1/3 of the step(5) and mix with bamboo charcoal powder evenly.
7. Put step (6) into a pump piping bag, and make horizontal lines on the mold.
8. Preheat the oven at 150°C and take it out immediately after 3 minutes of baking.
9. Pour the remaining egg paste into the mold.
10. Preheat the oven at 150°C, bake for 23 minutes.
11. After baking, unmold the cake and let it cool for 5-10 minutes.
12. While the cake is still warm, roll it up and let it cool, so that the cake will not crack after rolling up.
13. Whip Whipping cream and add condensed milk, prepare mango cube, and combine the cake as in the video, and serve.
