兒時回憶的中式甜品,又怎可能沒有焗西米布甸?蓮蓉、豆沙、栗子蓉、芋蓉...餡料,怎揀好呢?每款都咁好味!😋😋

材料 INGREDIENT:

紅豆蓉 Red Bean Paste 50克/g

西米 Sago 50克/g

椰漿 Coconut milk 50毫升/ml

花奶 Evaporated milk 50m毫升/ml

水 Water 300毫升

吉士粉 Custard Powder 2湯匙/tbsp

糖 Sugar 2湯匙/tbsp

牛油 Butter 20克/g

蛋 1隻 Egg (打勻)/(Stirred) 

步驟:

1. 燒滾水,下西米,不斷攪拌免黐底,煲約6分鐘後,熄火焗10分鐘。

2. 西米煮至8至9成變透明便可撈起,過冷河備用。(可在水龍頭下充分過冷河)

3. 用50毫升清水開吉士粉,加入椰漿、花奶,拌至無顆粒,備用。

4. 300毫升清水,加入糖、牛油,及西米煮至杰身,加入吉士糊加熱攪拌至杰身。

5. 離火,分兩次加蛋汁入漿內拌勻。

6. 再開中火,煮至杰身

7. 焗盤中倒入一半西米漿,中間放入紅豆蓉,倒入餘下西米漿鋪平。

8. 焗爐預熱至220度,用水浴法(底盤置熱水)焗盤,放入西米布甸焗20分鐘至表面金黃,完成。 

Step:

1. Boil boiling water, add sago, and stir constantly. After boiling for about 6 minutes, turn off the heat and bake for 10 minutes.

2. When sago become 80% to 90% transparent. (Can be fully passed under the water)

3. Boil the custard powder with 50 ml of water, add coconut milk and evaporated milk, mix until there are no particles, set aside 

4. Add 300ml of water, add sugar, butter, and sago to cook until thicken, 'add the custard paste, heat and stir until thicken.

5. Off heat, add egg paste and mix well.

6. Turn on medium heat again and cook until thicken.

7. Pour half of the sago milk into the baking container, add the red bean paste in the middle, and pour the remaining sago milk in.

8. Preheat the oven to 220 degrees, add the sago pudding to the baking dish in a water bath (place hot water in the bottom plate), and bake for 20 minutes until the surface beocme golden.
